Sweet + Sour = Yum!

In England the term "hotpot" means a casserole topped with sliced potatoes.  I found this recipe for sweet and sour mixed bean hotpot in one of my vegetarian cookbooks.  The name did not entice me but, as often is the case, the picture most definitely did.  It looked delectable, warm and hearty.  It also looked relatively easy!  Always a plus on a work night!  So, I set about recreating the recipe to meet our families likes and specifications.  This made a terrific main dish for us, paired with some fresh fruit.  If you are a must have meat person, this dish would be a fantastic side.  It is FULL of flavor and texture!  Either way, it's a nice change of pace from the norm!  It does take a bit to bake, but the good news is that the prep is minimal and you can do other things while this takes its sweet time in the oven.

Sweet & Sour Vegetable Bean Hotpot
Ingredients:
2 lbs Yukon Gold Potatoes
1 Tbsp. Olive Oil
3 Tbsp. Butter
1/3 cup Whole Wheat Flour
1 1/4 cups tomato sauce
2/3 cup of pear juice (apple would work too, but I had pear on hand)
4 Tbsp. light brown sugar
1/4 cup ketchup
1/4 cup cider vinegar
2 Tbsp. soy sauce
1/4 cup Vodka (optional - the original recipe called for Sherry, but I only had Vodka on hand)
1 can navy beans
1 can butter beans
1 can chick-peas
2 cups green beans
1 cup shallots, sliced
3 cups sliced mushrooms
1 Tbsp. fresh thyme
1 Tbsp. fresh marjoram
salt and ground pepper

Method:
  • Preheat the oven to 400 degrees.  Thinly slice the potatoes and boil them for 4 minutes.  Drain the potatoes and toss them with the olive oil, making sure they are coated all over.  Set them aside.
 
  • Melt the butter and add the flour, tomato sauce, pear juice, sugar, ketchup, vinegar, soy sauce and vodka in a large saucepan.  Heat gently while whisking until sauce begins to boil and thickens.  Simmer for 3 more minutes, stirring continuously.
 
  • Rinse and drain the beans and chick-peas and add to the sauce, along with all remaining ingredients.  Stir together, mixing well.
 
  • Spoon the bean mixture into baking dish.
 
  • Arrange the potato slices over the top of the bean mixture, overlapping them slightly, until the entire bean mixture is covered.
 
  • Cover with foil and back for 50 minutes, then remove foil and bake for an additional 20-25 minutes, until potatoes are golden.

Perfect Potatoes

I love french fries, really love them.  I know they are terrible for me, but I love them.  My husband helped me create a better solution to satisfy the french fry cravings.  Now these are a great favorite in our house.  My boys and I love to create all different kinds of sauces for dipping.  I introduced them to my favorite German dipping sauce, Rot-Weiss (red-white), which is basically ketchup with mayo.  Our plates look like painter's palette with every color of condiment imaginable.  Most taste great, some have not been winners. This is also a great way to use those potatoes that are getting older while hanging out in your kitchen.

So make your fries and eat them too!!

Oven Fries 
Ingredients:
*  6-10 small-medium potatoes (peeled or unpeeled according to preference)
*  1-2 Tbsp. of olive oil (1 if closer to 6 potatoes, 2 if closer to 10)
*  Spices to taste:  salt, pepper, parsley, garlic powder, Italian seasoning, etc. (whatever sounds good to you).



Method:
1.)  Wash (and peel, if desired) potatoes.  Then slice into desired size fries.

2.)  Combine olive oil and potatoes in large a bowl.
3.)  Mix in spices
4.)  Spread onto a large baking sheets.

5.)  Bake at 400 degrees for 20-30 minutes, until golden and crispy!

My Ultimate Comfort Meal

Well, our computer contracted a nasty virus, so I've been kept from posting my favorite soup recipes for the past few days. I decided to make up for that by posting two recipes that, when put together, comprise my ultimate in comfort food.  I made these together this week and it warmed me to my toes.  My family, sitting around the table, talking and laughing and enjoying good food together.  What could be better?  These are simple foods with simple ingredients.  I often find, those are the best though.  I hope you agree.

Here's to your comfort!!!

Smashed Potato Soup  (my favorite & Nathanael's)
10 - 12 medium potatoes pealed, cooked
2 Tbsp. Olive Oil
3 medium carrots, diced
3 stalks of celery, diced
1 medium-large onion, diced
2 cloves garlic, minced
1 can (14 1/2 oz) vegetable or chicken broth
1/2 cup milk
1/2 cup sourcream
Pepper to taste
Salt to taste

Saute the carrots, celery, onion  in olive oil for 4 minutes
Add garlic and saute for 1 minute more
Add potatoes and mash lightly
Stir milk and broth into the potatoes
Add in carrots, celery, onion & garlic
Stir in sour cream & salt and pepper

****This is a thick soup. If you like it thinner, add more broth or milk

Possible Toppings: Shredded Cheddar Cheese, Sliced Green Onions, Bacon pieces

And for dessert.....

Golden Apple Crisp  (made by Levi & myself)  
Ingredients:
*Filling -
12-15 golden delicious apples (peeled & sliced)
3 Tbsp. brown sugar
1 tsp. ground ginger
2 Tbsp. cinnamon (more if you love cinnamon)
1/4 tsp. ground nutmeg
4 Tbsp. lemon juice
*Crust Crumble
1/3 cup butter - softened
1 cup flour
1/2 cup oats
1/2 cup brown sugar
1 Tbsp cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground ginger

Method:
1.)  Peel and slice apples and stir together with lemon juice.
2.)  Add sugar and spice to apples and stir together
3.)  Pour filling into pie pan
4.)  In medium bowl combine flour and butter, using fork or pastry cutter.
5.)  Add in oats, sugar and spices.
6.)  Sprinkle over apple mixture to cover the entire top - use all!!
7.)  Bake at 350 degrees for 45-1 hour - until top is golden and inside is bubbly.
8.)  Enjoy!!
